Of course standardbreds can canter!  Standardbreds are just like other horses, except they have an extra gait which is the lateral moving pace.  Standardbreds that have just come off the track, or ones that have raced for many years may require more education to develop the muscles that will allow them to balance correctly with a rider on their back so that they can canter as well as other horses under saddle.  Not all Standardbreds are born pacers - some are trotters and never actually pace, but even the pacers that are trained to pace by using hopples (harness straps that help maintain the lateral movement of the pace) and harshly disciplined for breaking the pace during training and racing can be re-trained to trot and canter.
